Tuna Fish Salad

I haven't had real tuna fish salad while I have been here.   You can get tuna salad - but it's mostly just tuna and no mayo.  And, unfortunately for me, the mayo kind of makes the tuna salad.  Plus, I have to actually go to the cafe to get it - not easy and not really practical to load the boys up just so I can get tuna salad without the mayo.

So I had a brilliant idea. I would make my own tuna salad!  And I did!  Take that!  It not only tasted WAY better, it is way easier to just get it from my refrigerator than from the cafe down the street.  Plus, I save money!  I have been getting so much satisfaction every time we make food at home rather than make donations to a restaurant for frequently (but not always) inferior and always less healthy food.  (Okay, the tuna salad may be the one exception to the food made at home always being healthier.)

I got so motivated that I also made Cheddar Cauliflower soup and one of my favorite spicy pastas from  my Martha Stewart cookbook.  

I am hopeful that I can continue cooking more regularly as we have a new nanny.  She comes just a few times a week and I hope to make it to a gym (assuming we finally join) during that time as well take care of many other things, but even if I can cook just once a week, I would be pleased.

I know that probably doesn't sound very ambitious but the boys don't give me much time away from them and when they do, it's not easy to prepare food - we lack many critical supplies (measuring spoons, measuring cups, paring knives, and other helpful items).  So, when I do cook, it's not easy and it takes a while because I have to convert the receipt to metric to use the one measuring device we do have.
